Lost Lantern 2026 Single Cask #3 Day's Defile Idaho Bourbon is an incredibly high proof, 10 year old bourbon sourced from a closed Idaho “ghost” distillery that still has a lot to say.

Lost Lantern’s Spring 2026 Collection explores the difference between high proof and low proof whiskeys, showcasing both the intensity of cask strength whiskeys and the balance and approachability of lower proof ones. The collection includes the new Far-Flung Bourbon 100 Proof alongside a stronger cask strength version, plus eight single casks paired by proof from distilleries across the U.S - some of which have never been featured by Lost Lantern before. 

Lost Lantern 2026 Single Cask #3 is part of the company’s High-Low Mountain Bourbon Pairing. With a scorching high HAZMAT proof of 154.4, it acts as the higher proof bottle of the pairing, with the other, Lost Lantern 2026 Single Cask #4: Montgomery Distillery Montana Bourbon, coming in at 104.6 proof. The company states that “High elevation and dry air contribute to deeply concentrated spirits that can be bold and powerful, or rich and nuanced.”

Lost Lantern 2026 Single Cask #3 originates from a now-closed Idaho “ghost” distillery, whose barrels were acquired by Idaho-based Day Defile, where they continued to age for several years. Released at 10 years old and a whopping 154.4 proof, this HAZMAT whiskey is bold.  

The bourbon’s aroma is a wide range of scents: caramel upfront, followed by peanut brittle that quickly retreats to French vanilla, barrel char, and mixed berries. The palate starts with a mix of berries with a hint of pie crust, followed by strawberry rhubarb, which then turns to a robust mix of nutmeg and allspice. The finish brings back the peanut note from the nose and adds clove, fruit cake, and sweet barrel char. 

Being such high proof, it can be hard to fully parse all of the bourbon’s flavors, but they come in four main groups: red fruit, peanut, baking spices, and barrel char. Like many high proof pours, the proof tends to get in the way, but given this whiskey’s 150+ proof, the bourbon drinks surprisingly well without water added to it. Sourced from an undisclosed “ghost” distillery it's always fun to taste a “what if” whiskey. Though the closed distillery may not have found the necessary support while it was open, their whiskey lives on, showcasing what could have been. Given that there is a finite supply available, it's fun to taste a bit of history.
