Unique flavors collide with this regionally-inspired peated whiskey from one of the country’s most experienced single malt whiskey makers.
Westland Distillery was founded in 2010 and acquired by Remy-Cointreau in 2017. The distillery is located in Burlington, Washington, which is about 70 miles north of Seattle. Westland’s Solum releases are part of their Outpost Range series, which also includes Garryana and Colere. Solum was the third pillar of the Outpost Range. First introduced in 2023, the series focuses on Pacific Northwest regional peat. For the third edition, Westland fermented for 96-144 hours and then aged the whiskey in second-fill Cooper’s Reserve American Oak (68% of the blend) and new American oak (32% of the blend).
Solum is an exploration of unique flavors coming together. Peated stateside whiskeys tend to be more herbal than their European counterparts, and this whiskey is no exception. It begins with prominent scents of orange zest and milk chocolate, with a floral presence. A swirl of the glass reveals a hint of green tea. Citrus and malted milk balls on the palate are joined by fresh oak and ginger, with a quickly developing herbal undertone. A splash of allspice meets cedar and milk chocolate in the finish, which leaves a lingering herbal essence behind.
American single malts bring a wide range of flavors to the whiskey space. Citrus, chocolate, and herbal flavors are all elements found in them, but rarely do I find them together in one whiskey with such intensity. Westland delivers on satisfying their concept of exploration with this edition of Solum.
