Proving that they’ve mastered the art of toasted barrel finishes, New Holland Spirits ends the year on a high note with their latest Dragon’s Milk Origin Toasted Batch release.
New Holland Brewing Company’s toasted series continues to be highly anticipated among the company’s growing fanbase, with bottles released at their Michigan locations and more recently online as well. This is the second drop of the year, with batch designations of 2025E, 2025F, and 2025G. While 2025E and 2025F were finished in two secondary barrels, 2025G is an uncut bourbon that is finished in toasted barrels.
Much like the fantastic batch 2025A from earlier this year, batch 2025G is also only finished in toasted oak barrels. Similar to 2025A, 2025G delivers a near pleasing sip that is rich in flavor and highlights how well New Holland Spirits’ bourbon takes to toasted oak barrel finishing. It starts with an aroma that will remind you of fall. Berries in various forms, along with honey and honeydew, rest against the backdrop of dried fall leaves and lightly toasted oaky to kick things off with a great aroma. The midpoint pulls in a nice blend of unconventional sweet flavors along with more traditional spice and dry notes. Riding out on a pleasing finish, batch 2025G explodes with sweet plum and milk chocolate before pulling in a nice base of rye spice and charred oak.
We’re fans of New Holland Spirits’ finished single barrel and batched products, and for good reason. Their whiskey tends to take well, and sometimes incredibly well, to barrel finishes. In the case of batch 2025G, it pulls and teases out an array of pleasing sweet flavors from start to finish, while also maintaining balance thanks to rye spice and various oak, leather, and tobacco notes. There’s now no doubt that New Holland has mastered the finishing and blending of toasted barrel finishes of their whiskeys. The only gripe consumers will have is that these aren’t more widely available throughout the year.
