Phyllis & Her Walk In The Woods is distilled in Vermont using 100% Vermont grains. The distillery strives to be good stewards of the land, which operates via their registered Landcrafted mission. One of the brands distilled at Barr Hill Distillery, the company started distilling in 2011 using a 15 gallon copper pot still at their location in Hardwick, Vermont, near the Barr Hill Nature Preserve, their namesake. In 2019, the company moved to a new location in Montpelier, where they built out a distillery with increased production capacity.
Phyllis & Her Walk In The Woods Rye Whiskey Double Oaked is a blend of three different ryes and includes whiskey distilled at the company’s old and new distillery locations. The blend is finished in both Moscatel and used rye barrels, which is an unusual combination. The majority of the blend is aged less than 3 years, which results in an engaging, grain-forward flavor profile. There are some enjoyable sweet scents of brown sugar and Frosted Flakes cereal on the nose that combine with the more grain-forward presence to really invite you in. The palate has a lot going on, including an unusual old-fashioned sour cream donut note, some floral undertones, and a hint of dark chocolate that do well to layer in complexity. Spice picks up in the finish, which ends with a lingering brown sugar note.
This is an interesting whiskey, but it won’t be for everyone. It’s grain-forward, but rich and complex nonetheless. The Moscatel finish is apparent, but only has a slight impact on the overall flavor profile. If you enjoy out-of-the-box whiskeys with a high degree of complexity, this one's for you.
