New Holland Dragon’s Milk Origin Toasted releases have received high praise from Breaking Bourbon in the past, and for good reason. The unique single barrel releases have been full of interesting flavors that are easy to enjoy and taste unlike other bottles on the market. The problem has been that to date, these have been single barrels, and only sold at the distillery’s locations. That changes with the first releases in the 2025 series, which not only switch to a small batch product, but also switch to both a local release and an online ordering opportunity. This will finally give a broader range of bourbon drinkers a long overdue chance to be exposed to this line of bourbons and New Holland Spirits in general.
New Holland has a knack when it comes to naming their batches, and Batch 2025C is no exception. Aptly named “A Glimpse Towards Autumn,” the sip will transport you to a fire pit with autumn leaves falling to the ground. It starts with a nose that highlights a pleasing combination of flavors that are clearly influenced by its applejack finishing barrel, including baked cinnamon apple, prune, tree bark, and a slight ethanol note. The midpoint of the sip brings about flavors that come at you fast and furious and provides an amalgamation of flavors. The finish pulls in familiar notes from the nose and palate, with its proof shining through and providing a lingering spice which has you pausing for a long time in between sips. Overall, this is a pleasing offering from New Holland that utilizes its applejack finish to add in apple influence throughout without going overboard. While the proof impacts the nose and finish, this is the perfect bottle to pick up and enjoy around a fire on a crisp fall day.
