Copperworks Distilling Co. is a distillery located in downtown Seattle, Washington, and has been operating since 2013. Copperworks focuses on single malt whiskey, and variables across releases include the variety of barley, aging time, and characteristics of barrels used for aging. To create this whiskey, the company states that “Whidbey’s Port Cask American Single Malt Whiskey is distilled from our Five Malt recipe, matured for just under 7 years in a refilled American Single Malt Whiskey cask, and finished for another 7 months in a cask previously used to mature the local port-style wine, Whidbey’s Port.”
What keeps coming back to me after sampling this whiskey is the word “juicy.” Copper Works Port Cask Finish Single Malt displays various signs of berries and fruit throughout its sip, thanks to the extended finishing time in the Whidbery’s Port barrel. Malted barley is prominent throughout, starting on the nose, which also reveals a plethora of fruit-infused flavors. This includes a prickly pear note, something you don’t often encounter in a whiskey. The midpoint pulls in juicy berries and baking chocolate along with a light spice to form a flavorful backbone. The sip ends with a pop of white grape and heavy malted barley. Chewy oak and light, lingering heat provide additional depth.
This is an interesting American single malt whiskey. So often, port finished whiskeys seem played out, but in this case, it comes across as a new, unique experience. You still get the typical grape and berry notes, but you also get additional depth, thanks to the flavors and how they’re delivered. Tied in with a rich malted barley base, you have a great example of a barrel-finished American single malt.
