Finishing with Sherry French Revere Oak layers in a dynamic cross-section of fruity and sweet flavors against the flagship blend’s more forward rye spice.
According to the company’s press release, The Oak Collection is a new line extension that will be an ongoing series providing “exploration of whiskey tastes and constant innovation.” The initial release features two limited whiskeys, Pursuit United Bourbon Finished with Toasted American and French Oak and Pursuit United Rye Finished with Sherry French Revere Oak
This whiskey builds off the Pursuit United Rye base, using the same blend as the flagship according to Pursuit Spirits. The barrels were blended together before finishing with Sherry French Revere Oak. Compared to the flagship rye, it’s about on par in terms of overall quality but the finishing process does well taming some of the rye spice notes and layering in a barrage of sweet and fruit flavors. Citrus, tropical fruit, coconut, gingerbread, creme brulee, and brown sugar all become evident against the underlying rye spice base. Both are good, but offer a contrasting dynamic between more prominent straight rye flavors and rye accented by sweet and fruity notes. Like the standard version, the price is right, making this a rye worth seeking out for those who prefer a finished whiskey.
