Phyllis & Her Walk In The Woods is distilled in Vermont using 100% Vermont grains. The distillery strives to be good stewards of the land, which operates via their registered Landcrafted mission. One of the brands distilled at Barr Hill Distillery, the company started distilling in 2011 using a 15 gallon copper pot still at their location in Hardwick, Vermont, near the Barr Hill Nature Preserve, their namesake. In 2019, the company moved to a new location in Montpelier, where they built out a distillery with increased production capacity.
Phyllis & Her Walk In The Woods Tokaji Cask Finished is the company’s third release in their 2024 series, which includes Phyllis & Her Walk In The Woods Rye Whiskey Double Oaked and Phyllis & Her Walk In The Woods Rye Whiskey Port Cask Finished. Like the other two releases in 2024, Tokaji Finish is a complex whiskey that’s difficult to figure out immediately. It delivers a range of similar flavors to other finished ryes from the distillery, but adds a pleasing layer of stone fruits that’s most evident on the nose and palate. The Tokaji finish is also malty throughout, which is akin to the flavors you would pick up if you have ever experimented with steeping malted grain like a tea. While exploring the complexity of this whiskey is enjoyable and even challenging, the downside is that it has a youthful undertone that’s pervasive throughout, which is likely driven by the 3 year old component that makes up the majority of the blend. Upping the overall age of the blend, or possibly excluding that younger component entirely, could be the key to unlocking this whiskey.
