A Vermont distilled rye whiskey that borders too grain-forward, but has enough complexity to make it an interesting sipper.
Phyllis & Her Walk In The Woods is distilled in Vermont using 100% Vermont grains. The distillery strives to be good stewards of the land, which operates via their registered Landcrafted mission. One of the brands distilled at Barr Hill Distillery, the company started distilling in 2011 using a 15 gallon copper pot still at their location in Hardwick, Vermont near the Barr Hill Nature Preserve, their namesake. In 2019 the company moved to a new location in Montpelier, where they built out a distillery with increased production capacity.
Phyllis & Her Walk In The Woods Rye Whiskey Port Cask Finished is a blend of three different ryes and includes whiskey distilled at the company’s old and new distillery locations. The whiskey is grain-forward at the onset, which carries throughout the sip. Additional scents of pizza dough and green tea make for a unique introduction, which are followed by pretzel dough, black raspberry, fig, and a nutty undertone on the palate. Spice develops on the finish, along with toffee, caramel, and a lesser found anise note.
The grain-forward nature of the whiskey is heavy-handed, which will challenge many whiskey drinkers. It’s an interesting mix, and there is a good degree of complexity behind it, however, it walks the line of being overly grain forward with the supporting cast of flavors serving well to prop the whiskey up with a good degree of dimension and richness to make it interesting as a sipper.
