To create this unique single malt, Cedar Ridge first aged their whiskey for 2 years in new American oak barrels, followed by finishing the whiskey for an additional two years in a 500-liter Sherry butt that was imported from Jerez, Spain. It’s this two year finishing step that clearly influenced the whiskey’s direction. This malt is full of lush dark fruits that are instantly noticeable the moment you lift the glass and result in a fantastic opening nose. While the rest of the sip still highlights the sherry influence, more drier notes start to shine through and it doesn’t live up to the bold opening the nose promises. The result is a tempering down of the overall sip.
