Located in Denver, Colorado, Mile High Spirits is a company that states, “We take our spirits seriously, but not ourselves.” Utilizing a German copper still, the company distills and ages at their Denver location. The Single Barrel is a unique taste of the company’s bourbon at barrel proof.
Unlike the previous Fireside Single Barrel Bourbon I reviewed, this selection focuses on refinement instead of big, intense, and bombastic flavors. However, much like the other barrel, the assembly of flavors offered is quite unique, and everything comes together rather nicely. Fruit against pine, anise, and even green tea may sound like unusual flavors, but somehow it all works and each plays a part in complementing the others. Moreover, the drastic difference in flavor profile and proof demonstrates the range Mile High Spirits can offer with their Fireside Single Barrel Bourbons, leaving me thirsty for more.
