A dense and sweet honey-finished bourbon that fans of the style will absolutely love.
This is the second release of Dragon’s Milk Origin Honey Barrel, which was first released in April, 2023 and is slated to be an annual release going forward. This is a limited release, with bottles made available exclusively at the company’s Brewpub and Tasting Room locations in Holland, Michigan. To construct this small batch release, New Holland Spirits partnered with Great Lakes Bee Company to source their Hasselman’s Honey. Bourbon barrels were dumped and re-filled with honey to age, and then dumped again and refilled with Dragon’s Milk Origin Bourbon to finish before being batched and bottled.
Those who have tasted Dragon’s Milk Origin bourbons are familiar with its unique, lively, fruit-forward flavor flavor profile. When combined with honey barrel finishing, the result is a whiskey that’s dense and sweet, with ample honey-influence throughout. Dragon’s Milk’s base bourbon flavor profile still manages to cut through the dense honey to create a complementary base. By that measure, it’s exactly what someone might expect from a honey finished bourbon, leaning heavily into the honey notes similar to the degree to which Angel’s Envy Rum Cask Finished Rye leans into its rum barrel finishing - like it’s been soaked in it. While it may be too sickly sweet for some, ultimately there are very few honey finished whiskeys available at any given time, as most are flash in the pan limited releases that quickly come and go. Fans of the style, and especially fans of Dragon’s Milk Origin’s bourbon flavor profile, will absolutely love this release and following their next release of it, you can already go in knowing you want one.
