Utilizing wave-stave designed barrels has surprising results.
Buzzard’s Roost was created by Jason Brauner, the former co-owner of the influential Bourbons Bistro in Louisville, Kentucky. Their bourbons are originally sourced from MGP’s Ross & Squibb Distillery before being rebarreled in a brand new charred oak barrel that is custom ordered to Buzzard’s Roost’s specifications. Kindred Collaboration Bourbon takes this last step further by resting the bourbon in specially designed toasted wave-stave barrels, which take smooth ridges that are cut lengthwise creating peaks and valleys that react differently during toasting and charring. The idea is that it increases interaction with the bourbon while it ages. That sounds like a gimmick, but as always, the proof is in the taste.
zzThe bourbon opens with poignant scents of cinnamon stick and concord grape with layers of tempered charred oak and sweet corn behind it. Grape notes continue into the palate and are supported by notes of toffee, corn, and sweet oak. The finish tacks on dates, cinnamon, and molasses, converging into a rich tasting bourbon overall.
This bourbon is only currently available in Kentucky, but I suspect that will change as it's one of the best releases by Buzzard’s Roost so far. It’s surprisingly rich for a 5 year old, 105 proof bourbon, and its range of flavors is impressive. At $65 it's a no-brainer if you come across it in Kentucky, or if they decide to increase their distribution range.
