A unique tasting rye that’s true to its name.
“Wisconsin Waffles” is part of Two Souls Spirits’ Spring 2024 release which also features Double Barreled Pumpernickel Rye Featuring Midwest Spirits “O-H-Rye-O” and Rush Creek Distilling “Bold Rush.” Sourced from Wollersheim Distillery in Wisconsin, Two Souls Spirits describes Wollersheim Distillery as follows: “Situated on the grounds of Wollersheim Winery, a National Historic Site in Prairie du Sac, Wisconsin, Wollersheim Distillery has been producing premium craft spirits since 2009. While distillation was initially limited to grape brandy, the distillery has expanded production in recent years to include award-winning rye, bourbon, apple brandy, gin, and absinthe. Under the leadership of Master Distiller Tom Lenerz, Wollersheim Distillery has been quietly releasing some of the best craft bourbon and rye on the market.”
Wollersheim operates both a distillery and winery similar in nature to Huber’s, or Starlight Distillery as most know it. Wollersheim focused on distilling brandy first, which is made by distilling wine and aging it in oak barrels. They later expanded their spirit distillation to include rye. Wisconsin Waffles, as Two Souls lovingly nicknamed it, is full of flavor. It kicks off with a pancake syrup aroma on the nose, and I pick up pastry flavors reminiscent of waffles. There is a grain-forwardness to the whiskey as well, which falls into the stereotypical craft whiskey realm of the past decade, though it isn't as off-putting as many can be. Overall, Two Souls Spirits Wisconsin Straight Rye Whiskey Featuring Wollersheim Distillery is a unique tasting whiskey that’s true to its nickname.
