Two Souls Spirits is an independent bottler headed by James Estrada and Chad Civetti. Known as “The Whiskey Doctor,” Estrada has written for Bourbon Sippers and co-hosts the Whiskey Uncut Podcast. J. Carver Distillery was founded in 2012 and has been making bourbon, rye, and wheat whiskey ever since with the guiding motto of “Spirits of Discovery.” Located approximately 40 miles west of Minneapolis, Minnesota, this grain-to-glass distillery’s whiskey is aged in a cold northern climate that is different from other distilleries further south in the United States. Two Souls States that “The wheated bourbon whiskey in this bottle is not only one of oldest barrels from their rickhouse, but also one of the oldest barrels we have released to date.”
Two Souls Minnesota Straight Bourbon “Give ‘Em the Wheater” packs a flavorful sip from start to finish. It begins with a robust nose full of rich scents, including roasted coffee bean, barrel char, burnt caramel, and baking spices. These bold flavor notes carry over to the midpoint as cinnamon stick, burnt caramel, and creamy toffee wow you. The finish is where the more gentle nature of the bourbon’s wheated component shines through, with light baked bread, vanilla, and drier aged oak and leather coalescing nicely, before transitioning to a gentle heat.
Wheated bourbons can be known for their softness and often aren’t as bold as their rye counterparts. Two Souls Minnesota Straight Bourbon “Give ‘Em the Wheater” flips that script, combining the softness of a wheated bourbon while also highlighting bold flavors that enhance the sip nicely. J.
