Cognac finished bourbons are well worn at this point, but utilizing a wheat whiskey as the base produces compelling results.
Old Elk already offered us a great-tasting Cognac Cask Finish Bourbon earlier this year, so it comes as a little bit of a surprise they’re back with a variation of it so soon. This time they took their somewhat overlooked wheat whiskey and subjected it to as much as 12 months of finishing time in French Limousin Cognac casks. While you may assume a slight variation on what came before, the result is anything but.
Utilizing a 95% wheat mashbill fundamentally changes the core of this finished wheat whiskey. There are plenty of Cognac finished bourbons on the market, but a wheat whiskey finished one is far less common. Right from the first sip, you’ll take note of how soft, delicate, and overall approachable this whiskey is. Perhaps even more so, how the wheat whiskey pulls back somewhat on the heavy Cognac notes found in their Cognac finished bourbon. Many bourbon drinkers are well versed in high proof powerhouse drinks, but the art of making a flavorful and delicate sipping 100 proof range whiskey has been somewhat lost in all of the high proof chasing the industry faces. The result is that Old Elk Cognac Cask Finish Wheat Whiskey lacks the instant wow factor that their Cognac Cask Finish Bourbon features, but its more delicate nature shouldn’t be overlooked.
