Full of sweet and spice notes along with a punch to the face proof, Jacob’s Pardon Small Batch Recipe #3 is a nice introduction to high proof, high aged light whiskey.

Jacob’s Pardon was originally launched in late 2020 by father and son Marc D. and Jake Taub. The Taubs are most known for their wine and spirits import businesses, Palm Bay International and Taub Family Selections. The third and fourth generations of their family-owned enterprise created the brand as a “nod to Marc's great uncles' tradition of whiskey production. The family history dates back nearly a century with Jacob and Abner Taub during Prohibition.” The pair used spirits author F. Paul Pacult to serve as the master blender for the line. Recipe #3 is made up of 211 barrels of whiskey sourced from the Ross & Squibb Distillery in Indiana.

As can be expected from a whiskey that is over 140 proof, Jacob’s Pardon Small Batch Recipe #3 lets its proof be known. It starts with the nose that presents ethanol but also a warming aroma containing scents of cinnamon, nutmeg, spiced honey, and black cherry. The high proof carries through to the palate, which highlights sweet notes along with a prominent cinnamon spice. Rounding the whiskey out, a chewy dryness, cinnamon spice, oak, and leather ride out a wave of bold lingering heat. Though it doesn’t push any boundaries, Jacob’s Pardon Small Batch Recipe #3 is a nice introduction to light whiskey for those who are seeking out a sweet, high proof pour.
