Light in composition, Hinterhaus Single Malt “Discovery” Batch #4 will appeal to those looking for a fruit-forward American single malt.
Located 4,000 feet above sea level in the Sierra Mountains of California, Hinterhaus Distillery “shines a spotlight on the bounty of the region that has attracted generations to [its] rugged landscape.” The distillery is run by a husband and wife team Nate and Bonnie Randall. They produce vodka, gin, and liqueurs distilled from local Northern California wines, and finish their sourced bourbon in a number of used vineyards’ casks that are locally produced.
Originally released in 2023, Discovery was Hinterhaus’s first in-house American single malt. Batch 4 was released to “coincide with the TTB’s much-awaited ratification of the American Single Malt Whiskey category.” Each release has been uniquely different so far. The company is very open about the information for each release that makes them unique, providing the maltster where the grain was malted, a detailed barley maltbill, the cooperages used, and the casks used for aging. For Discovery Batch #4, the company states that 50% of the blend was aged in first fill ex-bourbon American oak while the other 50% was aged in first fill ex-wheat whiskey American oak.
The whiskey opens with a pleasing fruit-filled aroma. Light in composition, scents of white grape, ruby grapefruit, and honeydew blend with orange zest and hay. The midpoint brings about a thin mouthfeel that contains a blend of peppercorns, with green peppercorns providing the backbone. Light dry oak, and various fruits comprise the rest of the flavors. Finishing with a focus on flavors that came before, the sip ends with light lingering malt and spice. It’s proofed right, however, the short time in the barrels created a sip that is light and nuanced. Overall, this will appeal to those looking for a more delicate fruit-filled American single malt.
