About the Tiers

Stoll & Wolfe Distillery is based in Lititz, Pennsylvania. Even though it is considered a craft distillery, it has a rich history in whiskey thanks to the late Dick Stoll, who passed away in 2020. Stoll was the last master distiller at Pennsylvania’s Michter’s, where he also distilled bourbon for the A.H. Hirsch Bourbon brand. He was trained by Charles Everett Beam, who was the grandnephew of the legendary Jim Beam himself. To create their Straight American Whiskey Blend, the company blends bourbon from Ross & Squibb Distillery in Indiana with their in-house distilled Pennsylvania rye.

Currently run by husband and wife, Erik Wolfe and Avianna Ponzi Wolfe, the distillery afforded us an opportunity to pick from a number of unique barrels. This included a Solera Rye, Colonial Rye, and PA Rye whiskey, along with the Rosen Rye barrel we ultimately chose. Picking this barrel proved to be challenging, as each barrel offered unique traits, including the Colonial Rye, which was distilled using a unique cheese culture, which provided for a nice oily mouthfeel. While all were good, it was barrel number 3, the Rosen Rye Whiskey, that kept pulling us back in for more.

What makes this pick so special is that Breaking Bourbon’s barrel club is the first barrel club to be offered a single barrel of Rosen Rye. You know we always like to be trailblazers where we can, so having this fact revealed to us after we had already picked the barrel was the cherry on top of an already fantastic pick! While just shy of 4 years old, the barrel already displays rich, developed notes, with a pronounced nose of spices and a pleasing cinnamon note on the finish. Interestingly enough, the barrel entry proof for this bourbon was 109 proof, and the final barrel strength came out to be 108 proof, meaning the whiskey only dropped a single proof point throughout the aging process.

Tasting Notes:

The rye provides a warm, pleasing opening as loads of spice-influenced scents greet you. Baking spices rise up, along with powdered cinnamon. Toasted oak and faint rye bread join the fray, while creamy caramel resides faintly in the background. Rye spice leads the way along with cinnamon apple turnovers and white peppercorn. Toasted oak and leather join in to provide a grounding, dry base to rest on; however, the spice is the star of the show. Rye spice and bold cinnamon spice rush forward during the finish, pushing back on dry vanilla bean, oak, and faint leather. This is truly a rye lover's rye and a great example of the depth that Rosen Rye provides as a grain varietal.
