To celebrate their 10th anniversary, Watershed released in limited quantities a 6 year old bourbon finished in their used apple brandy casks. In addition to bourbon, Watershed dabbles in many other types of liquors, and does well to repurpose their used barrels wisely. Taking their already well-made whiskey and finishing it in apple brandy casks results in a whiskey that is hard to hate.
Being careful to not go overboard, the apple brandy finish is certainly present but not overpowering. An enjoyable level of sweetness and an apple flair works well against the whiskey heavier oak notes. Finally, the inclusion of a layer of stone fruit providing a solid middle ground for which the sweetness of the apple brandy and heavy oak to bounce off of, creates a dynamic sip. After being thoroughly impressed with their Nocino Finished Bourbon, I continue to enjoy the whiskeys Watershed Distillery is producing.
