Utilizing a four grain mashbill can bring great results, however, in this case it delivers a more muddled experience.
Oregon Spirit Distillers was established in 2009 by Brad and Kathy Irwin. Located in Bend, Oregon, the company is family-owned and sources 95% of their grains from Oregon farmers, with the remaining 5% sourced from Idaho and Washington. The company distills everything they bottle, producing 600 barrels of whiskey annually, which, according to the company, makes them the largest producer of bourbon and the second largest producer of American whiskey in the state of Oregon. The company produces bourbon, rye, and wheat whiskey in addition to a range of other non-whiskey spirits.
Four grain mashbills are relatively uncommon, especially when it comes to a company deciding to have their standard bourbon utilize four grains. In the case of Oregon Spirit Distillers Bourbon, the extra grain in the mashbill does less to enhance the sip and seems to muddle things instead. Starting with freshly milled grain and muddled oak, the sip also delivers scents of vanilla, green peppercorn, and fresh corn. The midpoint is thin and grainy, showcasing light, sweet vanilla and watery oak. Rye spice is also present, which carries over into the finish which ends the sip on an incredibly dry note. While additional time in the barrel might help the situation, overall, I was hoping for more from its four grain mashill.
