Copperworks Distilling Co.
October 8, 2025 - Drawn from a single cask the distillery filled back in January 2014, Copperworks Distilling Co. is proud to announce the release of Copperworks 11 Year Old American Single Malt Whiskey.
Available for pre-order beginning Friday, October 10, this ultra-rare release yields fewer than 200 bottles and will ship on or before November 14.
Distilled from pale malted barley sourced from Great Western Malting and matured for over 11 years in a char #3 new American oak cask from Independent Stave Company, Copperworks 11-Year-Old American Single Malt Whiskey carries the very essence of Copperworks’ earliest brews, fermentations, and distillations.
"This whiskey is a rare piece of Copperworks history as it was drawn from the second cask we ever filled,” said Copperworks President and Co-Founder Jason Parker. "It is a deeply layered, time-tempered American Single Malt Whiskey that captures our origin story in every sip.”
Tasting Notes from Copperworks Distilling Co.’s Co-Owners Jason Parker and Jeff Kanof Copperworks
Nilla wafer and shortbread on the nose mingle with black tea, prickly pear, leather, and damp old growth bark. The palate leads with dark chocolate and rosemary, giving way to strawberry preserves, red licorice, and kiwi before transitioning into the finish with prominent notes of cedar. These notes are further characterized by candied fennel and mint, lemongrass, Bananas Foster, and pipe tobacco.

About Copperworks Distilling Company ~ 2018 Distillery of the Year
Opened in 2013, Copperworks Distilling Company is an award-winning craft distillery, tasting room, and gift shop located in the high-traffic waterfront tourist district of downtown Seattle. The distillery produces small-batch American Single Malt Whiskey, a series of gins, and vodka, all from malted barley. Copperworks was founded by co-owners/distillers Jason Parker and Micah Nutt ~ both craft brewers with more than 30 years of experience in the alcohol industry. They built the distillery to answer the question: “How would spirits taste if they were distilled from superior craft beer (without the hops) instead of the typical methods of ingredients of conventional distilleries?” The answer led Copperworks to become a pioneer in producing American Single Malt Whiskey, a fast-growing spirits category with substantial national and international market interest. Copperworks’ spirits are distilled in traditional copper stills that were specifically created in Scotland for the distillery, and for the distillation of each individual spirit. Copperworks’ high-quality craft spirits have been recognized with multiple national and international awards, and the company was named the 2018 Distillery of the Year by the American Distilling Institute. In addition, Copperworks’ whiskey and gin have won Double-Gold medals and scored 94 – 96 points in prestigious spirits competitions. Copperworks spirits are found on the shelves of bars, restaurants, and retail stores throughout Washington State. Copperworks also offers tastings, tours, and other events focused on enjoying and learning about fine distilled spirits, including its ‘hands-on’ single-malt whiskey blending workshop. Copperworks was voted Best Distillery in the 2023 Best In The PNW contest presented by The Seattle Times.
